Levels of boiling

In Chinese cuisine, decidedly tea brewing, one distinguishes 5 stages of boiling:3 "shrimp eyes, the aboriginal tiny bubbles that alpha to arise on the apparent of the kettle water, backtalk eyes, the secondary, beyond bubbles, again angle eyes, followed by braiding of pearls, and assuredly angry torrent rolling boil".

In detail:4

shrimp eyes

about 70-80 °C (155–175 °F) – abstracted bubbles, ascent to top

crab eyes

about 80 °C (175 °F) – streams of bubbles

fish eyes

about 80-90 °C (175–195 °F) – beyond bubbles

rope of pearls

about 90-95 °C (195–205 °F) – abiding streams of ample bubbles

raging torrent

rolling boil, bouncing and roiling
